Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup cocoa powder (unsweetened)
  • 1/2 cup keto-friendly sweetener (like erythritol, monk fruit, or a blend)
  • 1/4 cup melted coconut oil or unsalted butter
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/4 tsp baking powder
  • A pinch of salt
  • Optional: 1/4 cup sugar-free chocolate chips or chopped nuts

Instructions:

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix Dry Ingredients: In a medium bowl, combine almond flour, shredded coconut, cocoa powder, sweetener, baking powder, and salt. Mix well.
  3. Add Wet Ingredients: In another bowl, whisk together the melted coconut oil (or butter), egg, and vanilla extract.
  4. Combine: Pour the wet ingredients into the dry ingredients and mix until fully combined. The dough should be somewhat thick and slightly crumbly.
  5. Add Optional Ingredients: If using, fold in the sugar-free chocolate chips or chopped nuts.
  6. Form Cookies: Scoop tablespoon-sized amounts of dough onto the prepared baking sheet. Flatten each cookie slightly with the back of a spoon.
  7. Bake: Bake in the preheated oven for 10-12 minutes, or until the edges are set and the tops look firm.
  8. Cool: Allow the cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
