Keto Eggs Benedict Quiche
Ingredients:
For the Quiche:
- 6 large eggs
- 1/2 cup heavy cream
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1 cup diced Canadian bacon or ham
- 1/2 cup shredded cheddar cheese
- 2 tablespoons chopped chives (optional)
For the Hollandaise Sauce:
- 3 egg yolks
- 1 tablespoon lemon juice
- 1/2 cup unsalted butter, melted
- Pinch of cayenne pepper (optional)
- Salt to taste
Instructions:
- Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or a quiche pan with cooking spray or butter.
- Prepare the Quiche Filling:
- In a large bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and onion powder.
- Stir in the diced Canadian bacon or ham and shredded cheese. Add chopped chives if using.
- Bake the Quiche:
- Pour the egg mixture into the prepared pie dish.
- Bake for 25-30 minutes, or until the quiche is set and lightly golden on top. A toothpick inserted in the center should come out clean.
- Remove from the oven and let it cool slightly while you prepare the hollandaise sauce.
- Make the Hollandaise Sauce:
- In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is smooth and pale.
- Place the bowl over a saucepan of simmering water (double boiler method), making sure the bowl does not touch the water.
- Slowly drizzle in the melted butter while whisking continuously. Continue to whisk until the sauce thickens to your desired consistency. Be careful not to overheat, as the eggs can scramble.
- Add a pinch of cayenne pepper and salt to taste.
- Serve:
- Slice the quiche into portions and drizzle the hollandaise sauce over the top of each slice.
- Garnish with additional chives if desired.
Tips:
- You can add spinach, asparagus, or other low-carb vegetables to the quiche for extra flavor and nutrition.
- For a slightly different twist, use smoked salmon instead of Canadian bacon or ham.
