Keto Eggs Benedict Quiche

Ingredients:

For the Quiche:

  • 6 large eggs
  • 1/2 cup heavy cream
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1 cup diced Canadian bacon or ham
  • 1/2 cup shredded cheddar cheese
  • 2 tablespoons chopped chives (optional)

For the Hollandaise Sauce:

  • 3 egg yolks
  • 1 tablespoon lemon juice
  • 1/2 cup unsalted butter, melted
  • Pinch of cayenne pepper (optional)
  • Salt to taste

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or a quiche pan with cooking spray or butter.
  2. Prepare the Quiche Filling:
    • In a large bowl, whisk together the eggs, heavy cream, salt, pepper, garlic powder, and onion powder.
    • Stir in the diced Canadian bacon or ham and shredded cheese. Add chopped chives if using.
  3. Bake the Quiche:
    • Pour the egg mixture into the prepared pie dish.
    • Bake for 25-30 minutes, or until the quiche is set and lightly golden on top. A toothpick inserted in the center should come out clean.
    • Remove from the oven and let it cool slightly while you prepare the hollandaise sauce.
  4. Make the Hollandaise Sauce:
    • In a heatproof bowl, whisk together the egg yolks and lemon juice until the mixture is smooth and pale.
    • Place the bowl over a saucepan of simmering water (double boiler method), making sure the bowl does not touch the water.
    • Slowly drizzle in the melted butter while whisking continuously. Continue to whisk until the sauce thickens to your desired consistency. Be careful not to overheat, as the eggs can scramble.
    • Add a pinch of cayenne pepper and salt to taste.
  5. Serve:
    • Slice the quiche into portions and drizzle the hollandaise sauce over the top of each slice.
    • Garnish with additional chives if desired.

Tips:

  • You can add spinach, asparagus, or other low-carb vegetables to the quiche for extra flavor and nutrition.
  • For a slightly different twist, use smoked salmon instead of Canadian bacon or ham.
