Keto Lumpia

Ingredients:

For the Filling:

  • 1 lb (450g) ground pork (or chicken or beef)
  • 1 cup finely chopped cabbage
  • 1/2 cup finely chopped carrots (optional, as carrots are slightly higher in carbs)
  • 1/4 cup finely chopped mushrooms
  • 1/4 cup chopped onions
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or coconut aminos
  • 1 tsp ground black pepper
  • 1/2 tsp salt (to taste)
  • 1/2 tsp ginger powder or 1 tsp freshly grated ginger
  • 1/4 cup chopped green onions (optional)

For the Wrapper:

  • 1 cup almond flour
  • 2 large eggs
  • 2 tbsp psyllium husk powder
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 cup water (adjust as needed)

For Frying:

  • Coconut oil or avocado oil

Instructions:

1. Prepare the Filling:

  1. In a large skillet, heat a small amount of oil over medium heat.
  2. Add the garlic and onions, and sauté until translucent.
  3. Add the ground pork (or your choice of meat) and cook until browned.
  4. Add the cabbage, mushrooms, and carrots (if using). Cook until the vegetables are tender.
  5. Stir in the soy sauce (or coconut aminos), salt, pepper, and ginger. Cook for another 2-3 minutes.
  6. Remove from heat and let the mixture cool slightly.

2. Make the Wrapper:

  1. In a medium bowl, mix the almond flour, psyllium husk powder, salt, and baking powder.
  2. Add the eggs and water, and stir until a dough forms. Adjust the water amount if needed to get a dough-like consistency.
  3. Divide the dough into small portions. Roll out each portion between two sheets of parchment paper until thin. Aim for a size that’s easy to work with for wrapping.

3. Assemble the Lumpia:

  1. Cut the rolled-out dough into squares or rectangles, large enough to hold a portion of the filling.
  2. Place a small spoonful of the filling in the center of each wrapper.
  3. Fold the sides of the wrapper over the filling, then roll it up tightly.
  4. Seal the edges with a bit of beaten egg or a small amount of water.

4. Fry the Lumpia:

  1. Heat oil in a skillet over medium heat.
  2. Fry the lumpia in batches until golden brown and crispy on all sides, about 3-4 minutes per side.
  3. Remove and drain on paper towels.

5. Serve:

  • Serve the lumpia hot with your favorite keto-friendly dipping sauce, such as a low-carb soy sauce or a sugar-free sweet chili sauce.
