KETO LOW CARB LASAGNA

Ingredients:
For the “Noodles” (Keto Pasta Layers)
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 2 large eggs
- ¾ cup almond flour
For the Meat Sauce:
- 1 lb ground beef or turkey
- 1 cup sugar-free marinara sauce
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp Italian seasoning
- Salt & pepper to taste
For the Cheese Filling:
- 1 cup ricotta cheese (or cottage cheese)
- 1 large egg
- ½ cup grated Parmesan cheese
- 1 tsp dried basil
Topping:
- 1½ cups shredded mozzarella cheese
Instructions:
1️⃣ Make the Keto “Noodles”
- Preheat oven to 350°F (175°C).
- In a microwave-safe bowl, melt mozzarella and cream cheese (about 45 seconds, stirring halfway).
- Mix in almond flour and eggs until a dough forms.
- Spread thinly on a parchment-lined baking sheet and bake for 10-12 minutes until set.
- Let cool, then cut into lasagna-sized sheets.
2️⃣ Prepare the Meat Sauce
- In a skillet, cook ground beef over medium heat until browned.
- Drain excess fat, then stir in marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.
3️⃣ Prepare the Cheese Mixture
- In a bowl, mix ricotta, egg, Parmesan, and basil until well combined.
4️⃣ Assemble the Lasagna
- In a greased baking dish, layer:
- Meat sauce
- Keto pasta layer
- Cheese mixture
- Repeat until all ingredients are used, topping with shredded mozzarella.
5️⃣ Bake & Serve
- Bake at 375°F (190°C) for 20 minutes, until cheese is bubbly and golden.
- Let rest for 5 minutes, then slice and enjoy!
