KETO LOW CARB LASAGNA

Ingredients:

For the “Noodles” (Keto Pasta Layers)

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 2 large eggs
  • ¾ cup almond flour

For the Meat Sauce:

  • 1 lb ground beef or turkey
  • 1 cup sugar-free marinara sauce
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp Italian seasoning
  • Salt & pepper to taste

For the Cheese Filling:

  • 1 cup ricotta cheese (or cottage cheese)
  • 1 large egg
  • ½ cup grated Parmesan cheese
  • 1 tsp dried basil

Topping:

  • 1½ cups shredded mozzarella cheese

Instructions:

1️⃣ Make the Keto “Noodles”

  • Preheat oven to 350°F (175°C).
  • In a microwave-safe bowl, melt mozzarella and cream cheese (about 45 seconds, stirring halfway).
  • Mix in almond flour and eggs until a dough forms.
  • Spread thinly on a parchment-lined baking sheet and bake for 10-12 minutes until set.
  • Let cool, then cut into lasagna-sized sheets.

2️⃣ Prepare the Meat Sauce

  • In a skillet, cook ground beef over medium heat until browned.
  • Drain excess fat, then stir in marinara sauce, garlic powder, onion powder, Italian seasoning, salt, and pepper. Simmer for 5 minutes.

3️⃣ Prepare the Cheese Mixture

  • In a bowl, mix ricotta, egg, Parmesan, and basil until well combined.

4️⃣ Assemble the Lasagna

  • In a greased baking dish, layer:
    1. Meat sauce
    2. Keto pasta layer
    3. Cheese mixture
    4. Repeat until all ingredients are used, topping with shredded mozzarella.

5️⃣ Bake & Serve

  • Bake at 375°F (190°C) for 20 minutes, until cheese is bubbly and golden.
  • Let rest for 5 minutes, then slice and enjoy!
