Keto / Low Carb Chocolate Chip Scones
Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup erythritol or your preferred keto-friendly sweetener
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup unsweetened almond milk (or any low-carb milk alternative)
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar-free chocolate chips
- 1 tsp vanilla extract

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together almond flour, coconut flour, erythritol, baking powder, baking soda, and salt.
- Combine Wet Ingredients: In another bowl, beat the eggs and then mix in the melted butter, almond milk, and vanilla extract.
- Combine Ingredients: Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the sugar-free chocolate chips.
- Shape the Scones: Transfer the dough to the prepared baking sheet. Using your hands or a spatula, shape it into a round disc about 1 inch thick. You can also divide the dough into 8-10 portions and shape them into individual scones.
- Bake: Bake in the preheated oven for 15-20 minutes, or until the edges are golden brown and the center is firm to the touch.
- Cool: Let the scones cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
