Keto Cheeseburger Quesadillas

Ingredients:

For the “Tortilla”:

  • 1 1/2 cups almond flour
  • 2 large eggs
  • 1/4 cup grated Parmesan cheese
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil (for cooking)

For the Filling:

  • 1/2 pound ground beef
  • 1 tablespoon olive oil
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Salt and pepper to taste
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup shredded mozzarella cheese
  • Pickles (optional, for garnish)

Instructions:

1. Make the “Tortilla”:

  1. In a bowl, mix the almond flour, Parmesan cheese, baking powder, salt, and garlic powder (if using).
  2. Add the eggs and stir until well combined. The dough should be soft but not too sticky.
  3. Divide the dough into 4 equal portions and roll each portion between two pieces of parchment paper until it’s about 1/8 inch thick.
  4. Heat a skillet over medium heat and add a little olive oil. Cook each tortilla for about 1-2 minutes per side, until lightly browned and cooked through. Set aside.

2. Prepare the Filling:

  1. Heat olive oil in a skillet over medium-high heat. Add the ground beef and cook until browned, breaking it apart with a spoon as it cooks.
  2. Season the beef with onion powder, garlic powder, paprika, salt, and pepper. Stir well to combine.
  3. Remove the beef from the skillet and set aside.

3. Assemble the Quesadillas:

  1. Place one tortilla in the skillet over medium heat.
  2. Sprinkle half of the cheddar and mozzarella cheese evenly over the tortilla.
  3. Spread half of the cooked ground beef over the cheese.
  4. Top with another tortilla and cook until the bottom is golden brown and the cheese is melting, about 2-3 minutes.
  5. Flip the quesadilla carefully and cook the other side until golden brown and the cheese is fully melted, about 2-3 minutes more.

4. Serve:

  1. Remove the quesadilla from the skillet and let it cool for a minute before slicing into wedges.
  2. Garnish with pickles if desired.
