Keto Lemon Pound Cake

Ingredients

For the Cake:

  • 1 ½ cups almond flour
  • ½ cup coconut flour
  • 1 cup granulated erythritol or another keto-friendly sweetener
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 4 large eggs
  • ½ cup unsalted butter, melted
  • ¼ cup fresh lemon juice (about 1-2 lemons)
  • 2 tbsp lemon zest
  • 1 tsp vanilla extract

For the Lemon Glaze:

  • ½ cup powdered erythritol or another keto-friendly powdered sweetener
  • 1-2 tbsp fresh lemon juice
  • 1-2 tbsp water (to reach desired consistency)

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
  2. Mix Dry Ingredients: In a large bowl, whisk together almond flour, coconut flour, granulated erythritol, baking powder, baking soda, and salt.
  3. Mix Wet Ingredients: In another bowl, beat the eggs. Then add the melted butter, lemon juice, lemon zest, and vanilla extract, mixing well.
  4. Combine Ingredients: Add the wet ingredients to the dry ingredients and mix until fully combined. The batter will be thick.
  5. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
  6. Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  7. Prepare Glaze: While the cake cools, make the lemon glaze. In a small bowl, whisk together the powdered erythritol and lemon juice. Add water a little at a time until you reach your desired consistency.
  8. Glaze the Cake: Once the cake is completely cooled, drizzle the glaze over the top.
  9. Serve: Slice and enjoy your keto lemon pound cake!

Tips:

  • Lemon Zest: For extra lemony flavor, you can increase the amount of lemon zest.
  • Sweetener: Adjust the amount of sweetener to taste, especially if you prefer a sweeter or less sweet cake.
