Keto Lemon Pound Cake

Ingredients
For the Cake:
- 1 ½ cups almond flour
- ½ cup coconut flour
- 1 cup granulated erythritol or another keto-friendly sweetener
- 1 tsp baking powder
- ½ tsp baking soda
- ¼ tsp salt
- 4 large eggs
- ½ cup unsalted butter, melted
- ¼ cup fresh lemon juice (about 1-2 lemons)
- 2 tbsp lemon zest
- 1 tsp vanilla extract
For the Lemon Glaze:
- ½ cup powdered erythritol or another keto-friendly powdered sweetener
- 1-2 tbsp fresh lemon juice
- 1-2 tbsp water (to reach desired consistency)

Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Grease and line a 9×5-inch loaf pan with parchment paper.
- Mix Dry Ingredients: In a large bowl, whisk together almond flour, coconut flour, granulated erythritol, baking powder, baking soda, and salt.
- Mix Wet Ingredients: In another bowl, beat the eggs. Then add the melted butter, lemon juice, lemon zest, and vanilla extract, mixing well.
- Combine Ingredients: Add the wet ingredients to the dry ingredients and mix until fully combined. The batter will be thick.
- Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean. The top should be golden brown.
- Cool: Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Prepare Glaze: While the cake cools, make the lemon glaze. In a small bowl, whisk together the powdered erythritol and lemon juice. Add water a little at a time until you reach your desired consistency.
- Glaze the Cake: Once the cake is completely cooled, drizzle the glaze over the top.
- Serve: Slice and enjoy your keto lemon pound cake!
