Keto Lemon Blueberry Loaf

Ingredients:

  • For the Loaf:
    • 2 cups almond flour
    • 1/2 cup erythritol or another keto-friendly sweetener (adjust to taste)
    • 1/4 cup coconut flour
    • 1/4 cup unsalted butter, melted (or coconut oil)
    • 4 large eggs
    • 1/2 cup unsweetened Greek yogurt or sour cream
    • 2 tbsp lemon juice (freshly squeezed)
    • 1 tbsp lemon zest
    • 1 1/2 tsp baking powder
    • 1/4 tsp salt
    • 1/2 cup fresh or frozen blueberries (if using frozen, do not thaw)
  • For the Glaze (optional):
    • 1/2 cup powdered erythritol
    • 1-2 tbsp lemon juice

Instructions:

  1. Preheat Oven and Prepare Pan:
    • Preheat your oven to 350°F (175°C).
    • Line a 9×5-inch loaf pan with parchment paper or lightly grease it with butter or oil.
  2. Mix Dry Ingredients:
    • In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Mix well to combine.
  3. Mix Wet Ingredients:
    • In another bowl, whisk together the melted butter, eggs, Greek yogurt (or sour cream), lemon juice, and lemon zest until smooth.
  4. Combine Ingredients:
    • Gradually add the wet ingredients to the dry ingredients, stirring until fully combined and smooth.
    • Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
  5. Pour Batter and Bake:
    • Pour the batter into the prepared loaf pan, spreading it evenly.
    • Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
  6. Cool and Glaze (optional):
    • Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
    • If using the glaze, whisk together the powdered erythritol and lemon juice until smooth and drizzle over the cooled loaf.
  7. Serve:

Notes:

  • Storage: Store the loaf in an airtight container at room temperature for up to 3 days. For longer storage, keep it in the refrigerator for up to a week or freeze individual slices for up to 3 months.
  • Sweetener: Adjust the amount of erythritol based on your taste preference and the sweetness of your blueberries.
  • Blueberries: If using frozen blueberries, they may bleed into the batter, so handle them gently to minimize this effect.
