Keto Lemon Blueberry Loaf

Ingredients:
- For the Loaf:
- 2 cups almond flour
- 1/2 cup erythritol or another keto-friendly sweetener (adjust to taste)
- 1/4 cup coconut flour
- 1/4 cup unsalted butter, melted (or coconut oil)
- 4 large eggs
- 1/2 cup unsweetened Greek yogurt or sour cream
- 2 tbsp lemon juice (freshly squeezed)
- 1 tbsp lemon zest
- 1 1/2 tsp baking powder
- 1/4 tsp salt
- 1/2 cup fresh or frozen blueberries (if using frozen, do not thaw)
- For the Glaze (optional):
- 1/2 cup powdered erythritol
- 1-2 tbsp lemon juice

Instructions:
- Preheat Oven and Prepare Pan:
- Preheat your oven to 350°F (175°C).
- Line a 9×5-inch loaf pan with parchment paper or lightly grease it with butter or oil.
- Mix Dry Ingredients:
- In a large bowl, combine the almond flour, coconut flour, erythritol, baking powder, and salt. Mix well to combine.
- Mix Wet Ingredients:
- In another bowl, whisk together the melted butter, eggs, Greek yogurt (or sour cream), lemon juice, and lemon zest until smooth.

- Gradually add the wet ingredients to the dry ingredients, stirring until fully combined and smooth.
- Gently fold in the blueberries, making sure they are evenly distributed throughout the batter.
- Pour Batter and Bake:
- Pour the batter into the prepared loaf pan, spreading it evenly.
- Bake in the preheated oven for about 45-50 minutes, or until a toothpick inserted into the center comes out clean.
- Cool and Glaze (optional):
- Allow the loaf to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- If using the glaze, whisk together the powdered erythritol and lemon juice until smooth and drizzle over the cooled loaf.
- Serve:
