Keto Grilled Cheese

Ingredients:
- For the Bread:
- 1 1/2 cups almond flour
- 1/4 cup coconut flour
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
- For the Sandwich:
- 2 tablespoons unsalted butter (for grilling)
- 4 ounces cheddar cheese, sliced (or cheese of your choice)
Instructions:
- Prepare the Bread:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the almond flour, coconut flour, baking powder, and salt.
- Add the melted butter and eggs to the dry ingredients and mix until a dough forms.
- Press the dough into a flat, rectangular shape on the parchment paper. Aim for about 1/4-inch thickness.
- Bake for 15-20 minutes, or until the bread is golden brown and set. Let it cool completely.
- Assemble and Grill:
- Slice the baked bread into sandwich-sized pieces.
- Place cheese slices between two slices of the bread to make your sandwich.
- Heat 1 tablespoon of butter in a skillet over medium heat.
- Grill the sandwich on each side until golden brown and the cheese is melted, about 2-3 minutes per side.
