Keto Goulash

Ingredients:

  • 1 lb ground beef (or turkey)
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 green bell pepper, chopped
  • 1 cup cauliflower rice (or zucchini noodles for a different texture)
  • 1 can (14.5 oz) diced tomatoes, no sugar added
  • 1/2 cup beef broth (or chicken broth)
  • 2 tbsp tomato paste
  • 1 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese (optional for topping)
  • 2 tbsp olive oil

Instructions:

  1. Cook the Ground Beef: In a large pan, heat olive oil over medium heat. Add the ground beef, breaking it up as it cooks. Once browned, drain any excess fat.
  2. Add Vegetables: Stir in the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes, until softened.
  3. Combine the Sauces: Add the diced tomatoes, beef broth, and tomato paste to the pan. Stir to combine. Bring to a simmer.
  4. Season: Add paprika, oregano, salt, and pepper to taste. Let it simmer for another 10-15 minutes, stirring occasionally.
  5. Add Cauliflower Rice: Stir in the cauliflower rice (or zucchini noodles), and cook for another 5-7 minutes until the cauliflower rice is tender.
  6. Serve: If desired, top with shredded cheddar cheese and let it melt before serving.
