Keto Goulash
Ingredients:
- 1 lb ground beef (or turkey)
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 green bell pepper, chopped
- 1 cup cauliflower rice (or zucchini noodles for a different texture)
- 1 can (14.5 oz) diced tomatoes, no sugar added
- 1/2 cup beef broth (or chicken broth)
- 2 tbsp tomato paste
- 1 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- 1 cup shredded cheddar cheese (optional for topping)
- 2 tbsp olive oil
Instructions:
- Cook the Ground Beef: In a large pan, heat olive oil over medium heat. Add the ground beef, breaking it up as it cooks. Once browned, drain any excess fat.
- Add Vegetables: Stir in the chopped onion, garlic, and bell pepper. Sauté for about 5 minutes, until softened.
- Combine the Sauces: Add the diced tomatoes, beef broth, and tomato paste to the pan. Stir to combine. Bring to a simmer.
- Season: Add paprika, oregano, salt, and pepper to taste. Let it simmer for another 10-15 minutes, stirring occasionally.
- Add Cauliflower Rice: Stir in the cauliflower rice (or zucchini noodles), and cook for another 5-7 minutes until the cauliflower rice is tender.
- Serve: If desired, top with shredded cheddar cheese and let it melt before serving.
