Keto Garlic Parmesan Knots

Ingredients:

  • For the dough:
    • 1 ½ cups shredded mozzarella cheese
    • 2 oz cream cheese
    • 1 large egg
    • 1 cup almond flour
    • 1 tsp baking powder
    • ½ tsp garlic powder
    • ½ tsp salt
  • For the garlic butter topping:
    • 4 tbsp unsalted butter, melted
    • 2 cloves garlic, minced (or 1 tsp garlic powder)
    • ¼ cup grated Parmesan cheese
    • 1 tsp Italian seasoning
    • Fresh parsley, chopped (optional, for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Make the Dough:
    • In a microwave-safe bowl, combine the mozzarella cheese and cream cheese. Microwave for about 30 seconds, stir, then heat for another 30 seconds until melted and smooth.
    • In a separate bowl, mix the almond flour, baking powder, garlic powder, and salt.
    • Add the melted cheese mixture and the egg to the dry ingredients. Mix until a dough forms. You may want to use your hands to knead it a bit until smooth.
  3. Shape the Knots:
    • Divide the dough into 8 equal pieces. Roll each piece into a long rope (about 6 inches) and tie it into a knot. Place the knots on the prepared baking sheet.
  4. Prepare the Garlic Butter:
    • In a small bowl, combine the melted butter, minced garlic, Parmesan cheese, and Italian seasoning.
  5. Bake:
    • Brush the garlic butter mixture over the knots, reserving some for brushing after baking.
    • Bake in the preheated oven for 12-15 minutes or until golden brown.
  6. Finish and Serve:
    • Once out of the oven, brush the remaining garlic butter on top of the knots. Garnish with fresh parsley if desired.
