2-4 fish fillets (salmon, cod, or tilapia work great)
4 tbsp unsalted butter (or ghee for a nutty flavor)
4 garlic cloves, minced
1 tbsp olive oil
1 tsp paprika (optional, for color and a mild kick)
1 tbsp lemon juice (freshly squeezed)
1 tsp dried parsley (or 1 tbsp fresh, chopped)
Salt and pepper to taste
Lemon wedges (for serving)
Instructions
Prepare the fish: Pat the fish fillets dry with paper towels. Season both sides with salt, pepper, and paprika.
Heat the pan: In a large skillet, heat the olive oil over medium-high heat.
Cook the fish: Place the fillets in the hot pan. Cook for 3-4 minutes per side (depending on thickness) until golden and flaky. Remove the fish and set aside.
Make the garlic butter:
Reduce the heat to medium.
In the same skillet, melt the butter. Add the minced garlic and sauté for 30 seconds until fragrant.
Stir in the lemon juice and parsley.
Combine and serve: Return the fish to the skillet and spoon the garlic butter sauce over it. Let it simmer for 1-2 minutes to soak up the flavors.
Garnish and enjoy: Serve hot with lemon wedges and your favorite keto sides, like sautéed zucchini noodles, cauliflower rice, or steamed broccoli.
