Keto Garlic Bread

Ingredients:

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese (about 1/4 cup)
  • 1 large egg
  • 1 1/2 cups almond flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Salt, to taste
  • 2 tablespoons butter, melted
  • 2 tablespoons fresh parsley, chopped (optional for garnish)
  • 3 cloves garlic, minced (for garlic butter)
  • 1 tablespoon olive oil (for garlic butter)

Instructions:

Step 1: Make the dough

  1. Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or a silicone mat.
  2. In a microwave-safe bowl, combine the shredded mozzarella and cream cheese. Microwave for 30 seconds at a time, stirring in between, until melted and fully combined.
  3. Add the egg to the melted cheese mixture and stir until smooth.
  4. In a separate bowl, whisk together the almond flour, baking powder, garlic powder, onion powder, and salt.
  5. Slowly incorporate the dry ingredients into the wet mixture, mixing until a dough forms.

Step 2: Shape and bake

  1. Shape the dough into a loaf or small breadsticks (you can divide the dough into 6-8 portions for breadsticks or form one large loaf).
  2. Place the dough onto the prepared baking sheet and bake for 15-20 minutes or until golden brown on top and firm to the touch.

Step 3: Make the garlic butter

  1. While the bread is baking, melt the butter in a small saucepan over medium heat.
  2. Add the minced garlic and olive oil to the pan. Sauté for 1-2 minutes, stirring constantly, until fragrant.

Step 4: Serve

  1. Once the bread is done baking, remove it from the oven and brush the garlic butter generously over the top of the bread.
  2. Garnish with freshly chopped parsley, if desired.

Tips:
