Keto Drop Biscuits
Ingredients:
- 2 cups almond flour
- 1 tablespoon baking powder
- 1/2 teaspoon garlic powder (optional, for flavor)
- 1/4 teaspoon salt
- 1/4 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup shredded cheddar cheese (optional, for cheesy biscuits)
- 1/4 cup heavy cream
- 1 teaspoon apple cider vinegar
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
- Mix the Dry Ingredients: In a large mixing bowl, combine the almond flour, baking powder, garlic powder (if using), and salt. Stir until well mixed.
- Prepare the Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, heavy cream, and apple cider vinegar until smooth.
- Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. If you’re adding cheese, fold it into the batter at this stage.
- Shape the Biscuits: Using a spoon or a cookie scoop, drop mounds of dough onto the prepared baking sheet. Leave some space between each biscuit as they will spread slightly while baking.
- Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown around the edges and firm to the touch.
- Cool and Serve: Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm, and enjoy!
Tips:
- Storage: Store any leftover biscuits in an airtight container in the refrigerator for up to 3 days. They can also be frozen and reheated in the oven or microwave.
