Keto Drop Biscuits

Ingredients:

  • 2 cups almond flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon garlic powder (optional, for flavor)
  • 1/4 teaspoon salt
  • 1/4 cup unsalted butter, melted
  • 2 large eggs
  • 1/2 cup shredded cheddar cheese (optional, for cheesy biscuits)
  • 1/4 cup heavy cream
  • 1 teaspoon apple cider vinegar

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
  2. Mix the Dry Ingredients: In a large mixing bowl, combine the almond flour, baking powder, garlic powder (if using), and salt. Stir until well mixed.
  3. Prepare the Wet Ingredients: In a separate bowl, whisk together the melted butter, eggs, heavy cream, and apple cider vinegar until smooth.
  4. Combine Wet and Dry Ingredients: Pour the wet ingredients into the dry ingredients and stir until just combined. Be careful not to overmix. If you’re adding cheese, fold it into the batter at this stage.
  5. Shape the Biscuits: Using a spoon or a cookie scoop, drop mounds of dough onto the prepared baking sheet. Leave some space between each biscuit as they will spread slightly while baking.
  6. Bake: Bake in the preheated oven for 12-15 minutes, or until the biscuits are golden brown around the edges and firm to the touch.
  7. Cool and Serve: Allow the biscuits to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Serve warm, and enjoy!

Tips:

  • Storage: Store any leftover biscuits in an airtight container in the refrigerator for up to 3 days. They can also be frozen and reheated in the oven or microwave.
  • Variations: Add herbs like rosemary or thyme for extra flavor, or experiment with different types of cheese.
