keto Donut

Ingredients:

  • 2 cups almond flour
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup erythritol (or any keto-friendly sweetener)
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • 2 large eggs
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • Optional: 1/2 tsp ground cinnamon for flavor

Instructions:

  1. Preheat your oven to 350°F (175°C) and grease a donut pan or use a silicone mold.
  2. In a medium-sized bowl, whisk together almond flour, baking powder, salt, and erythritol.
  3. In another bowl, whisk the eggs, almond milk, melted coconut oil (or butter), and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until well combined. If you’d like, add the cinnamon for extra flavor.
  5. Spoon the batter into the donut pan, filling each mold about 3/4 full.
  6. Bake for 15–18 minutes or until a toothpick inserted into the center comes out clean.
  7. Allow the donuts to cool for a few minutes before removing them from the pan.

Optional Toppings:

  • Melted dark chocolate (sugar-free)
  • Sugar-free powdered sweetener
  • A sprinkle of cinnamon
