Ingredients:

For the Rolls:

  • 2 cups almond flour
  • 1/4 cup psyllium husk powder
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup cream cheese
  • 2 large eggs
  • 1/4 cup warm water (or as needed)
  • 1 tablespoon melted butter (for brushing)

Optional:

  • 1 tablespoon sesame seeds or poppy seeds (for topping)
  • 1/2 teaspoon dried herbs (such as rosemary or thyme, for added flavor)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare the Dough:
    • In a large mixing bowl, combine the almond flour, psyllium husk powder, baking powder, and salt.
    • In a microwave-safe bowl, melt the mozzarella cheese and cream cheese together. Heat in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
    • Add the melted cheese mixture and eggs to the dry ingredients. Mix until a dough forms. If the dough is too dry, gradually add warm water, a tablespoon at a time, until the dough is soft but not sticky.
  3. Shape the Rolls:
    • Divide the dough into 8-10 equal portions and shape each portion into a ball. Place the rolls on the prepared baking sheet, spacing them about 2 inches apart.
  4. Add Toppings (Optional):
    • If using, sprinkle the tops of the rolls with sesame seeds or poppy seeds. You can also sprinkle dried herbs for added flavor.
  5. Bake the Rolls:
    • Brush the tops of the rolls with melted butter.
    • Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and firm to the touch.
  6. Cool and Serve:
    • Allow the rolls to cool slightly on a wire rack before serving.
