Ingredients:
For the Rolls:
- 2 cups almond flour
- 1/4 cup psyllium husk powder
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese
- 2 large eggs
- 1/4 cup warm water (or as needed)
- 1 tablespoon melted butter (for brushing)
Optional:
- 1 tablespoon sesame seeds or poppy seeds (for topping)
- 1/2 teaspoon dried herbs (such as rosemary or thyme, for added flavor)

Instructions:
- Preheat the Oven:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.
- Prepare the Dough:
- In a large mixing bowl, combine the almond flour, psyllium husk powder, baking powder, and salt.
- In a microwave-safe bowl, melt the mozzarella cheese and cream cheese together. Heat in 30-second intervals, stirring in between, until the mixture is smooth and fully melted.
- Add the melted cheese mixture and eggs to the dry ingredients. Mix until a dough forms. If the dough is too dry, gradually add warm water, a tablespoon at a time, until the dough is soft but not sticky.
- Shape the Rolls:
- Divide the dough into 8-10 equal portions and shape each portion into a ball. Place the rolls on the prepared baking sheet, spacing them about 2 inches apart.
- Add Toppings (Optional):
- If using, sprinkle the tops of the rolls with sesame seeds or poppy seeds. You can also sprinkle dried herbs for added flavor.
- Bake the Rolls:
- Brush the tops of the rolls with melted butter.
- Bake in the preheated oven for 15-20 minutes, or until the rolls are golden brown and firm to the touch.
- Cool and Serve:
- Allow the rolls to cool slightly on a wire rack before serving.
