Ingredients:
For the Dough:
- 2 cups almond flour
- 1/2 cup coconut flour
- 1/4 cup granulated erythritol (or preferred keto sweetener)
- 1/2 teaspoon salt
- 1 teaspoon baking powder
- 1/2 cup butter, softened
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup shredded mozzarella cheese
- 1/4 cup cream cheese
For the Egg Wash:
- 1 large egg, beaten
- 1 tablespoon heavy cream

Instructions:
- Preheat Oven: Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the Dough:
- In a large bowl, combine almond flour, coconut flour, erythritol, salt, and baking powder.
- In a separate microwave-safe bowl, melt the butter, mozzarella cheese, and cream cheese together. Stir until smooth and combined.
- Add the melted cheese mixture, eggs, and vanilla extract to the dry ingredients. Mix until a dough forms.
- Roll Out the Dough:
- Place the dough between two sheets of parchment paper. Roll it out into a rectangle about 1/4 inch thick.
- Using a pizza cutter or knife, cut the dough into triangles. You can make them as large or small as you like.
- Shape the Croissants:
- Starting from the wide end of each triangle, roll the dough up towards the point to form a croissant shape.
- Place the rolled croissants on the prepared baking sheet.
- Add the Egg Wash:
- In a small bowl, mix the beaten egg with heavy cream. Brush this mixture over the croissants for a golden finish.
- Bake:
- Bake in the preheated oven for 12-15 minutes, or until the croissants are golden brown and cooked through.
- Cool:
- Allow the croissants to cool slightly on a wire rack before serving.
