Keto Cranberry Brie Bites

Ingredients:

  • 1 sheet of keto-friendly puff pastry (or you can use almond flour dough for a homemade version)
  • 8 oz Brie cheese, cut into small cubes
  • 1/4 cup sugar-free cranberry sauce (store-bought or homemade)
  • 1/4 cup chopped pecans (optional)
  • Fresh rosemary or thyme (for garnish)
  • 1 egg (for egg wash, optional)

Instructions:

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the dough: If using almond flour dough, roll it out to about 1/8 inch thickness. If using store-bought keto puff pastry, roll it out on a parchment paper-lined surface.
  3. Cut the dough into squares: Use a sharp knife or cookie cutter to cut the dough into squares, about 2-3 inches in size.
  4. Assemble the bites:
    • Place a small cube of Brie cheese in the center of each square.
    • Add a small spoonful of sugar-free cranberry sauce on top of the cheese.
    • Optionally, sprinkle with chopped pecans for added crunch.
  5. Fold the dough: Fold up the edges of the dough around the filling, creating little packets. Pinch the corners to seal the bites.
  6. Brush with egg wash (optional): Lightly brush the tops of the dough with a beaten egg for a golden finish.
  7. Bake: Place the assembled bites on a baking sheet and bake for 12-15 minutes, or until golden brown and crispy.
  8. Garnish: After baking, garnish with fresh rosemary or thyme for a festive touch.
