- 1/4 cup butter (melted)
- 1 large egg
- 1/2 cup mozzarella cheese (shredded)

- 1 tsp cinnamon (for dough)
- 1/4 cup butter (for brushing)
- 1 tbsp cinnamon (for topping)
- 2 tbsp erythritol or preferred keto sweetener (for topping)
Instructions:
- Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Mix the dry ingredients: In a large bowl, combine almond flour, flaxseed, baking powder, salt, and cinnamon.
- Melt the cheese: In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Heat in 30-second intervals, stirring in between, until fully melted and smooth.
- Combine wet and dry ingredients: Add the melted cheese mixture to the dry ingredients. Stir in the egg and melted butter. Mix everything together until it forms a dough.
- Shape the pretzels: Divide the dough into 6 equal portions. Roll each portion into a long rope (about 12 inches long). Twist each rope into a pretzel shape and place them on the prepared baking sheet.
- Bake: Place the pretzels in the oven and bake for 12-15 minutes, or until golden brown.
- Prepare the topping: While the pretzels bake, melt 1/4 cup of butter in a small bowl. In another bowl, mix the cinnamon and erythritol (or sweetener).
- Finish the pretzels: Once the pretzels are done, brush them with the melted butter and sprinkle the cinnamon-sweetener mixture over them.
