KETO CRACK CHICKEN IN THE CROCK POT

Ingredients:

  • 2 lbs (900 g) chicken breasts or thighs (boneless, skinless)
  • 1 packet (1 oz or 28 g) ranch seasoning mix (make sure it’s low-carb)
  • 1 packet (1 oz or 28 g) ranch dip mix (optional for extra flavor, also low-carb)
  • 8 oz (225 g) cream cheese (cubed)
  • 1 cup (240 ml) chicken broth
  • 1/2 cup (120 ml) heavy cream
  • 1 cup (100 g) shredded cheddar cheese
  • 6-8 slices of cooked bacon (crumbled)
  • 2 green onions (chopped, for garnish)
  • Salt and pepper to taste

  1. Prepare the Chicken:
    • Place the chicken breasts or thighs in the Crock Pot.
  2. Add Seasonings and Cream Cheese:
    • Sprinkle the ranch seasoning mix (and optional ranch dip mix) over the chicken.
    • Add the cubed cream cheese on top of the chicken.
  3. Add Liquids:
    • Pour the chicken broth over the chicken and cream cheese.
  4. Cook:
    • Cover and cook on low for 6-7 hours, or on high for 3-4 hours, until the chicken is tender and easily shredded.
  5. Shred the Chicken:
    • Once cooked, shred the chicken in the Crock Pot using two forks.
  6. Add Cheese and Cream:
    • Stir in the heavy cream and shredded cheddar cheese. Mix well until the cheese is melted and the mixture is creamy.
  7. Add Bacon:
    • Stir in the crumbled bacon.
  8. Season and Garnish:
    • Taste and adjust seasoning with salt and pepper as needed.
    • Garnish with chopped green onions.

Serving Suggestions:

  • Serve over a bed of cauliflower rice or alongside steamed vegetables.
  • You can also use it as a filling for lettuce wraps or low-carb tortillas.
