KETO COWBOY COOKIES

Ingredients:

  • 1 cup almond flour
  • 1/2 cup unsweetened shredded coconut
  • 1/2 cup sugar-free chocolate chips (or chopped dark chocolate)
  • 1/4 cup chopped walnuts (or any preferred nuts)
  • 1/4 cup unsweetened peanut butter or almond butter
  • 2 large eggs
  • 1/4 cup butter, softened
  • 1/4 cup erythritol or any low-carb sweetener
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions:

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, beat the butter, peanut butter, and erythritol together until smooth and creamy.
  3. Add the eggs and vanilla extract, mixing until well combined.
  4. In a separate bowl, whisk together the almond flour, shredded coconut, baking powder, and salt.
  5. Slowly add the dry ingredients to the wet ingredients, mixing until fully incorporated.
  6. Fold in the sugar-free chocolate chips and chopped walnuts.
  7. Scoop tablespoon-sized portions of the cookie dough and place them on the prepared baking sheet, flattening each slightly with the back of the spoon.
  8. Bake for 12-15 minutes, or until the edges are golden brown.
  9. Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
