KETO COWBOY COOKIES
Ingredients:
- 1 cup almond flour
- 1/2 cup unsweetened shredded coconut
- 1/2 cup sugar-free chocolate chips (or chopped dark chocolate)
- 1/4 cup chopped walnuts (or any preferred nuts)
- 1/4 cup unsweetened peanut butter or almond butter
- 2 large eggs
- 1/4 cup butter, softened
- 1/4 cup erythritol or any low-carb sweetener
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, beat the butter, peanut butter, and erythritol together until smooth and creamy.
- Add the eggs and vanilla extract, mixing until well combined.
- In a separate bowl, whisk together the almond flour, shredded coconut, baking powder, and salt.
- Slowly add the dry ingredients to the wet ingredients, mixing until fully incorporated.
- Fold in the sugar-free chocolate chips and chopped walnuts.
- Scoop tablespoon-sized portions of the cookie dough and place them on the prepared baking sheet, flattening each slightly with the back of the spoon.
- Bake for 12-15 minutes, or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
