Ingredients:

  • 1 ½ cups shredded unsweetened coconut
  • ¼ cup coconut oil (or melted butter)
  • ¼ cup powdered erythritol or other keto-friendly sweetener (adjust to taste)
  • ½ teaspoon vanilla extract
  • ¼ teaspoon sea salt
  • ¼ cup sugar-free chocolate chips (optional)
  • 1 tablespoon coconut flour (optional, for texture)

Instructions:

  1. Prepare the Mixture:
    • In a medium-sized bowl, combine the shredded coconut, coconut oil (or melted butter), powdered erythritol, vanilla extract, and sea salt. Mix until well combined. If the mixture seems too wet or loose, you can add a tablespoon of coconut flour to help bind it together.
  2. Shape the Mixture:
    • Using your hands or a small cookie scoop, form the mixture into small balls or bars. Place them on a parchment-lined baking sheet. If you prefer, you can press them into silicone molds for a more uniform shape.
  3. Chill:
    • Refrigerate the shaped coconut joys for about 30 minutes to an hour, or until they firm up.
  4. Optional Chocolate Coating:
    • If you want to coat them in chocolate, melt the sugar-free chocolate chips in a microwave-safe bowl in 20-30 second intervals, stirring between each interval until smooth.   5. Final Chill:
    • Place the chocolate-coated joys back in the refrigerator to allow the chocolate to set, about 15-20 minutes.
