Keto Chocolate Salami
Ingredients:
- 1 cup (100g) almond flour
- 1/2 cup (50g) unsweetened cocoa powder
- 1/2 cup (120ml) heavy cream
- 1/4 cup (60ml) melted coconut oil or unsalted butter
- 1/4 cup (60ml) sugar-free sweetener (like erythritol or monk fruit sweetener, adjust to taste)
- 1/2 cup (60g) chopped nuts (such as almonds, walnuts, or pecans)
- 1/4 cup (30g) unsweetened shredded coconut (optional)
- 1/2 teaspoon vanilla extract
- A pinch of salt
- Powdered sweetener for coating (optional, for a more realistic look)

Instructions:
- Combine Dry Ingredients:
- In a large bowl, whisk together the almond flour, cocoa powder, and a pinch of salt.
- Mix Wet Ingredients:
- In a separate bowl, mix the heavy cream, melted coconut oil (or butter), sweetener, and vanilla extract.
- Combine Wet and Dry Ingredients:
- Gradually add the wet mixture to the dry ingredients, stirring until well combined. The mixture should be thick and slightly crumbly.
- Add Nuts and Coconut:
- Fold in the chopped nuts and shredded coconut (if using) until evenly distributed.
- Form the Salami:
- Place a large sheet of plastic wrap on a flat surface. Transfer the chocolate mixture onto the plastic wrap and shape it into a log or salami form. Wrap it tightly in the plastic wrap, smoothing out any uneven areas.
- Chill:
- Refrigerate the chocolate salami for at least 2 hours, or until firm. You can also freeze it for about an hour if you need it to firm up faster.
- Finish:
- Once firm, unwrap the salami from the plastic wrap. If desired, roll it in powdered sweetener to give it a more realistic “salami” look.
- Slice and Serve:
- Slice the salami into rounds and enjoy! It can be stored in the refrigerator for up to 2 weeks or frozen for longer storage.
