Ingredients:

  • 2 oz unsweetened dark chocolate (at least 85% cocoa, or use sugar-free chocolate)
  • 2 tbsp powdered erythritol (or your preferred keto sweetener)
  • 1 tsp vanilla extract
  • **Pinch of salt
  • Optional: Shaved chocolate, berries, or whipped cream for garnish

Instructions:

  1. Melt the Chocolate:
    • Chop the unsweetened dark chocolate into small pieces. In a heatproof bowl, melt the chocolate. You can melt it in the microwave in 20-second bursts or use a double boiler on the stove. Stir occasionally to ensure it melts evenly. Once melted, set aside to cool slightly.
  2. Whip the Cream:
    • In a mixing bowl, pour the heavy cream (or coconut cream). Use a hand mixer or stand mixer to beat the cream on medium-high speed until soft peaks form. You can also do this by hand, but it will take a little longer. Be careful not to overbeat it into butter.
  3. Sweeten:
    • Add the powdered erythritol (or your preferred keto sweetener) and vanilla extract to the whipped cream. Continue to beat until stiff peaks form.
  4. Combine the Chocolate and Cream:
    • Once the chocolate has cooled slightly, gently fold the melted chocolate into the whipped cream. Use a spatula to mix until the chocolate is fully incorporated, and the mousse becomes smooth and creamy.
  5. Chill:
    • Spoon the mousse into serving dishes or glasses. Chill in the fridge for at least 1 hour to allow the mousse to firm up and set.
  6. Serve:
    • Garnish with optional toppings like shaved chocolate, berries, or a dollop of whipped cream if desired.
