Ingredients:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup granulated erythritol or your preferred keto sweetener
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 2 large eggs
  • 1/4 cup unsweetened almond milk (or any low-carb milk substitute)
  • 1/4 cup melted coconut oil or butter
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips (such as Lily’s or another brand that fits your keto needs)

Instructions:

  1. Preheat your waffle iron according to the manufacturer’s instructions.
  2. Mix dry ingredients: In a large bowl, whisk together the almond flour, coconut flour, erythritol, baking powder, and salt.
  3. Combine wet ingredients: In another bowl, beat the eggs. Then add the almond milk, melted coconut oil or butter, and vanilla extract. Mix well.
  4. Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir until just combined. The batter will be thicker than traditional waffle batter.
  5. Fold in chocolate chips: Gently fold the sugar-free chocolate chips into the batter.
  6. Cook the waffles: Lightly grease your waffle iron if necessary. Pour enough batter onto the waffle iron to just cover the surface. Close the waffle iron and cook according to the manufacturer’s instructions, usually for about 3-5 minutes, until the waffles are golden brown and crispy.
  7. Serve: Carefully remove the waffles from the iron. Serve warm with your favorite keto-friendly toppings like whipped cream, fresh berries, or a drizzle of sugar-free syrup.

Tips:

  • If your batter is too thick, you can add a bit more almond milk to reach your desired consistency.
