1/2 cup sugar-free chocolate chips (or chopped dark chocolate)
Instructions:
Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Mix wet ingredients: In a bowl, cream together the softened butter and sweetener until smooth. Add the egg and vanilla extract, mixing until fully combined.
Add dry ingredients: In a separate bowl, whisk together the almond flour, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Add chocolate chips: Fold in the sugar-free chocolate chips or chopped dark chocolate.
Form the cookies: Scoop tablespoon-sized portions of dough and roll them into balls. Place them on the prepared baking sheet, leaving space between each one.
Flatten the dough: Gently press each cookie ball down with the back of a spoon to flatten slightly.
Bake: Bake for 10-12 minutes or until golden brown around the edges.
Cool: Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
