Ingredients:
- 2 cups cooked chicken, shredded or diced (rotisserie chicken works great)
- 2 medium zucchinis, sliced (about 2 cups)
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1/2 cup grated Parmesan cheese
- 1/2 cup heavy cream
- 1/4 cup mayonnaise
- 2 large eggs
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon onion powder
- Salt and pepper, to taste
- 2 tablespoons olive oil (or butter)
- 1/4 cup fresh parsley, chopped (optional, for garnish)

Instructions:
- Preheat the oven to 375°F (190°C). Grease a 9×13-inch baking dish with a bit of olive oil or non-stick spray.
- Prepare the zucchini: Heat olive oil in a large skillet over medium heat. Add the zucchini slices and cook for about 5-7 minutes, or until they start to soften. Season with a little salt and pepper. Remove from heat and set aside.
- Mix the creamy base: In a large bowl, whisk together the heavy cream, mayonnaise, and eggs until well combined. Stir in the minced garlic, dried oregano, dried basil, onion powder, and a pinch of salt and pepper.
- Combine ingredients: Add the cooked chicken, zucchini, shredded cheddar cheese, and Parmesan cheese to the creamy mixture. Stir until everything is well mixed.
- Transfer to baking dish: Pour the mixture into the prepared baking dish and spread it out evenly.
- Bake: Place the casserole in the preheated oven and bake for 25-30 minutes, or until the top is golden brown and the casserole is bubbly.
- Cool and garnish: Let the casserole cool for a few minutes before serving. Garnish with fresh parsley if desired.
