KETO CHICKEN FLORENTINE CASSEROLE

Ingredients:

  • 2 cups cooked chicken (shredded or diced)
  • 2 cups fresh spinach (chopped)
  • 1/2 cup heavy cream
  • 1/2 cup cream cheese (softened)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup chicken broth
  • 2 cloves garlic (minced)
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon onion powder
  • Salt and pepper to taste
  • 2 tablespoons olive oil (or butter) for sautéing

Instructions:

  1. Preheat the oven to 375°F (190°C) and grease a casserole dish with cooking spray or butter.
  2. Sauté spinach and garlic: In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for about 1 minute until fragrant. Add the spinach and cook until wilted, about 3-4 minutes. Remove from heat.
  3. Prepare the sauce: In a separate saucepan, combine the heavy cream, cream cheese, and chicken broth. Heat over medium heat, stirring constantly until the cream cheese is melted and smooth. Add the basil, onion powder, salt, and pepper.
  4. Assemble the casserole: In the prepared casserole dish, combine the cooked chicken, sautéed spinach and garlic, mozzarella cheese, and Parmesan cheese. Pour the sauce over the chicken and spinach mixture. Stir gently to combine.
  5. Bake: Cover the casserole with foil and bake for 20 minutes. Then, uncover and bake for an additional 10-15 minutes, or until the top is golden and bubbly.
  6. Serve: Let the casserole cool for a few minutes before serving. Garnish with extra Parmesan or fresh herbs, if desired.

Tips:

  • For extra flavor, you can add some cooked bacon or mushrooms to the casserole.
  • If you prefer a more cheesy dish, you can increase the mozzarella and Parmesan ratio.
  • This casserole is perfect served with a side of steamed vegetables or a simple salad for a complete meal.
