KETO CHICKEN ALFREDO CASSEROLE

Ingredients:
- 2 cups cooked chicken (shredded or cubed; rotisserie chicken works well)
- 1 medium head of cauliflower, cut into florets
- 1 cup heavy cream
- 1 cup chicken broth (make sure it’s low-carb)
- 1 cup shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1/2 cup cream cheese
- 2 tablespoons olive oil or butter
- 1 teaspoon dried basil
- 1/2 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup chopped fresh parsley (optional, for garnish)

Instructions:
- Preheat Oven:
- Preheat your oven to 375°F (190°C).
- Prepare Cauliflower:
- Bring a large pot of salted water to a boil.

- Mash Cauliflower:
