Ingredients:

  • 1 cup shredded cheddar cheese (sharp or extra sharp for more flavor)
  • 1 cup almond flour
  • 1 large egg
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon paprika (or smoked paprika for a smoky flavor)
  • 1/4 teaspoon salt (or to taste)
  • Optional: a pinch of cayenne pepper for some heat

Instructions:

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix Dry Ingredients: In a bowl, combine the almond flour, garlic powder, onion powder, paprika, salt, and optional cayenne pepper.
  3. Add Cheese: Stir the shredded cheddar cheese into the dry mixture.
  4. Add Egg: Beat the egg and add it to the cheese and flour mixture. Mix until a dough forms. The dough will be somewhat sticky.
  5. Shape the Cheetos: Using your hands or a small cookie scoop, shape the dough into small, thin logs or sticks. You can also shape them into puffs if you prefer.
  6. Bake: Arrange the shaped dough on the prepared baking sheet, spacing them about 1 inch apart. Bake in the preheated oven for 10-12 minutes or until they are golden brown and crispy. Keep an eye on them to avoid burning.
  7. Cool: Allow the Cheetos to cool on the baking sheet for a few minutes; they will crisp up further as they cool.
  8. Store: Once completely cooled, store your keto Cheetos in an airtight container. They should stay crisp for several days.
