Ingredients:
- 1 cup shredded mozzarella cheese
- 2 tbsp cream cheese
- 1 egg
- ½ cup almond flour
- 1 tsp baking powder
- 1 tsp garlic powder (optional)
- ½ tsp Italian seasoning or oregano
- 2 tbsp olive oil
- ¼ cup shredded cheddar or parmesan (for topping)
- Salt to taste
Instructions:
- Melt Cheese:
In a microwave-safe bowl, melt mozzarella and cream cheese together (about 30–40 seconds). Mix until smooth. - Make Dough:
Add egg, almond flour, baking powder, garlic powder, Italian seasoning, and a pinch of salt. Mix into a sticky dough. - Shape & Cook:
Grease a non-stick pan with 1 tbsp olive oil. Press the dough into the pan to form a flatbread shape. - Cook One Side:
Cover and cook on low heat for 5–7 minutes until the bottom is golden. - Flip & Top:
Flip the focaccia carefully, drizzle a little more olive oil, and sprinkle cheddar/parmesan on top. - Final Cook:
Cover and cook the other side for another 5 minutes until golden and cheese is melted. - Serve:
Slice and enjoy warm with some keto-friendly marinara or garlic butter!
