Diabetic-Friendly Apple Yogurt Cake

🧾 Ingredients
- 2 medium apples (sliced)
- 1 cup plain Greek yogurt (unsweetened)
- 2 eggs
- 1/3 cup erythritol or monk fruit sweetener
- 1 tsp vanilla extract
- 1 cup almond flour
- 2 tbsp coconut flour
- 1 tsp baking powder
- 1/2 tsp cinnamon
- Pinch of salt
- 2 tbsp melted butter or coconut oil

Slice apples and lightly sauté with a bit of cinnamon until slightly soft. - Make batter
Mix yogurt, eggs, sweetener, vanilla, and melted butter.
Add almond flour, coconut flour, baking powder, cinnamon, and salt. - Assemble
Place apples in a greased pan, then pour batter over them. - Bake
Bake at 180°C / 350°F for 30–40 minutes until golden and set. - Cool & serve
Let cool before slicing. Optional: light dusting of powdered erythritol.
