🧾 Ingredients

  • 2 medium apples (sliced)
  • 1 cup plain Greek yogurt (unsweetened)
  • 2 eggs
  • 1/3 cup erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • 1 cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 1/2 tsp cinnamon
  • Pinch of salt
  • 2 tbsp melted butter or coconut oil

👩‍🍳 Instructions

  1. Prep apples
    Slice apples and lightly sauté with a bit of cinnamon until slightly soft.
  2. Make batter
    Mix yogurt, eggs, sweetener, vanilla, and melted butter.
    Add almond flour, coconut flour, baking powder, cinnamon, and salt.
  3. Assemble
    Place apples in a greased pan, then pour batter over them.
  4. Bake
    Bake at 180°C / 350°F for 30–40 minutes until golden and set.
  5. Cool & serve
    Let cool before slicing. Optional: light dusting of powdered erythritol.
