keto Cheesy Cauliflower Breadsticks recipe
Ingredients:
- 1 large head of cauliflower (about 6 cups riced cauliflower)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 2 large eggs
- 1/2 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup chopped fresh parsley (optional, for garnish)
Instructions:
- Preheat the Oven:
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- Prepare the Cauliflower:
- Remove the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. You should have about 4 to 6 cups of riced cauliflower.
- Place the riced cauliflower in a microwave-safe bowl and microwave on high for about 5-6 minutes until softened. Allow it to cool slightly.
- Drain the Cauliflower:
- Place the cooked cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to getting a crisp texture.
- Mix the Ingredients:
- In a large bowl, combine the riced cauliflower, shredded mozzarella cheese, grated Parmesan cheese, eggs, garlic powder, oregano, basil, salt, and pepper. Mix well until the ingredients are fully incorporated.
- Shape the Dough:
- Transfer the mixture to the prepared baking sheet. Use your hands or a spatula to press it into a rectangular shape, about 1/4 to 1/2 inch thick.
- Bake:
- Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and the center is set.
- Add Toppings (Optional):
- If desired, sprinkle additional cheese or herbs on top and return to the oven for another 5 minutes until melted.
- Cool and Cut:
- Allow the breadsticks to cool for a few minutes before cutting them into sticks. Garnish with chopped parsley if you like.
- Serve:
- Serve warm with your favorite dipping sauce or as a side with your meal.
