keto Cheesy Cauliflower Breadsticks recipe

Ingredients:

  • 1 large head of cauliflower (about 6 cups riced cauliflower)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 cup chopped fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the Oven:
    • Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. Prepare the Cauliflower:
    • Remove the leaves and stem from the cauliflower. Cut it into florets and pulse in a food processor until it resembles rice. You should have about 4 to 6 cups of riced cauliflower.
    • Place the riced cauliflower in a microwave-safe bowl and microwave on high for about 5-6 minutes until softened. Allow it to cool slightly.
  3. Drain the Cauliflower:
    • Place the cooked cauliflower in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible. This step is crucial to getting a crisp texture.
  4. Mix the Ingredients:
    • In a large bowl, combine the riced cauliflower, shredded mozzarella cheese, grated Parmesan cheese, eggs, garlic powder, oregano, basil, salt, and pepper. Mix well until the ingredients are fully incorporated.
  5. Shape the Dough:
    • Transfer the mixture to the prepared baking sheet. Use your hands or a spatula to press it into a rectangular shape, about 1/4 to 1/2 inch thick.
  6. Bake:
    • Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and the center is set.
  7. Add Toppings (Optional):
    • If desired, sprinkle additional cheese or herbs on top and return to the oven for another 5 minutes until melted.
  8. Cool and Cut:
    • Allow the breadsticks to cool for a few minutes before cutting them into sticks. Garnish with chopped parsley if you like.
  9. Serve:
    • Serve warm with your favorite dipping sauce or as a side with your meal.
