Keto Brioche Bread Loaf

Ingredients:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 4 tbsp unsalted butter, melted
  • 3 large eggs
  • 1/4 cup heavy cream
  • 1/4 cup warm water
  • 1 tbsp apple cider vinegar
  • 2 tbsp erythritol (optional, for a slight sweetness)
  • 1/2 tsp xanthan gum (for elasticity)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a loaf pan.
  2. In a bowl, whisk together almond flour, coconut flour, baking powder, salt, and xanthan gum.
  3. In another bowl, mix melted butter, eggs, heavy cream, warm water, and apple cider vinegar.
  4. Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
  5. Pour the batter into the loaf pan and smooth the top.
  6. Bake for 35–40 minutes or until golden brown and a toothpick comes out clean.
  7. Let it cool before slicing.
