Keto Brioche Bread Loaf

Ingredients:
- 2 cups almond flour
- 1/4 cup coconut flour
- 1 tbsp baking powder
- 1/2 tsp salt
- 4 tbsp unsalted butter, melted
- 3 large eggs
- 1/4 cup heavy cream
- 1/4 cup warm water
- 1 tbsp apple cider vinegar
- 2 tbsp erythritol (optional, for a slight sweetness)
- 1/2 tsp xanthan gum (for elasticity)
Instructions:
- Preheat oven to 350°F (175°C). Grease a loaf pan.
- In a bowl, whisk together almond flour, coconut flour, baking powder, salt, and xanthan gum.
- In another bowl, mix melted butter, eggs, heavy cream, warm water, and apple cider vinegar.
- Gradually add the dry ingredients to the wet mixture and stir until a dough forms.
- Pour the batter into the loaf pan and smooth the top.
- Bake for 35–40 minutes or until golden brown and a toothpick comes out clean.
- Let it cool before slicing.
