Keto Breakfast Casserole

Ingredients:
- 1 lb breakfast sausage (ground or links, your choice)
- 6 large eggs
- 1/2 cup heavy cream
- 1 cup shredded cheddar cheese (or cheese of your choice)
- 1/2 cup diced bell peppers (optional, can use other veggies like spinach or mushrooms)
- 1/2 cup diced onion (optional)
- 1/4 cup green onions (optional)
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper to taste
- 1/2 tsp dried thyme (optional)
- Butter or oil for greasing the pan
Instructions:
- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish with butter or oil.
- Cook the Sausage: In a skillet over medium heat, cook the breakfast sausage until browned and cooked through, breaking it up as it cooks. If using sausage links, remove the casing and crumble the meat. Once cooked, drain any excess fat if necessary.
- Prepare the Veggies: If you’re adding vegetables like bell peppers, onions, or spinach, sauté them in the same skillet for a few minutes until tender. Set aside.
- Whisk the Eggs: In a large bowl, whisk together the eggs and heavy cream. Add in the garlic powder, onion powder, thyme (if using), salt, and pepper.
- Combine Ingredients: Layer the cooked sausage and sautéed veggies (if using) in the bottom of the prepared baking dish. Pour the egg mixture over the top and stir gently to combine.
- Add Cheese: Sprinkle shredded cheese evenly on top of the casserole.
- Bake: Bake in the preheated oven for 30-40 minutes, or until the eggs are fully set and the top is lightly golden brown. A toothpick or knife should come out clean from the center.
- Cool and Serve: Let the casserole cool for a few minutes before slicing. Garnish with green onions if desired.
Tips:
- Feel free to customize the casserole with other keto-friendly ingredients like zucchini, mushrooms, or even bacon.
