Crispy Crab Nuggets!!

Ingredients:
- 1 lb lump crab meat (fresh or canned, drained and checked for shells)
- 1/2 cup almond flour (for low-carb option, or regular breadcrumbs if you prefer)
- 1/4 cup grated parmesan cheese
- 2 large eggs (beaten)
- 1/4 cup mayonnaise
- 1 tbsp Dijon mustard
- 1 tbsp Worcestershire sauce
- 1/2 tsp Old Bay seasoning (or more to taste)
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley (optional, for freshness)
- 1/2 cup panko breadcrumbs (optional, for extra crunch)
- Oil (for frying, such as vegetable oil or avocado oil)
Instructions:
- Prepare the Crab Mixture:
- In a large bowl, gently mix the crab meat, almond flour (or breadcrumbs), parmesan cheese, eggs, mayonnaise, Dijon mustard, Worcestershire sauce, Old Bay seasoning, garlic powder, onion powder, salt, and pepper.
- Use your hands or a spoon to carefully combine the mixture without breaking up the crab meat too much. It’s okay if some lumps remain.
- Form the Nuggets:
- Using your hands, form the crab mixture into small nugget shapes or balls. They should be about the size of a golf ball, or you can make them smaller if you prefer bite-sized pieces.
- If you want an extra crispy texture, roll the nuggets in panko breadcrumbs. This step is optional but adds a nice crunch.
- Heat the Oil:
- In a large skillet or frying pan, heat about 1/2 inch of oil over medium heat. You can test the oil temperature by dropping a small bit of the crab mixture into it; it should sizzle immediately.
- Fry the Nuggets:
- Carefully place the crab nuggets into the hot oil, being sure not to overcrowd the pan. Fry for about 2-3 minutes per side, or until they are golden brown and crispy on the outside. Flip them gently to avoid breaking them apart.
- Drain and Serve:
- Once cooked, remove the crab nuggets from the oil and place them on a paper towel-lined plate to drain excess oil.
- Serve with Dipping Sauce:
- Serve the crispy crab nuggets with your favorite dipping sauce, like a homemade tartar sauce, cocktail sauce, or a tangy lemon aioli.
Tips:
- For extra flavor: Try adding a bit of chopped green onion or a dash of hot sauce to the mixture.
- Baking option: You can also bake the nuggets at 375°F (190°C) on a parchment-lined baking sheet for about 15-20 minutes, flipping halfway through, for a healthier version.
