Keto Berry Fool

Ingredients:

  • 1 cup mixed berries (such as strawberries, blueberries, raspberries, and blackberries)
  • 1 cup heavy whipping cream
  • 1-2 tablespoons powdered erythritol (or any keto-friendly sweetener of your choice, adjust to taste)
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon juice (optional, for a hint of tartness)

Instructions:

  1. Prepare the Berries:
    • Wash the berries and pat them dry.
    • If using strawberries, hull and slice them.
    • Place the berries in a bowl and gently mash them with a fork, leaving some larger pieces for texture. Add lemon juice if using.
  2. Sweeten the Berries:
    • Sprinkle 1 tablespoon of the powdered erythritol over the berries and mix well. Adjust the sweetness to your preference. Set aside.
  3. Whip the Cream:
    • In a large mixing bowl, combine the heavy whipping cream, the remaining powdered erythritol, and vanilla extract.
    • Whip the cream using an electric mixer until soft peaks form. Be careful not to over-whip.
  4. Fold in the Berries:
    • Gently fold the mashed berries into the whipped cream, creating a marbled effect. Do not overmix to maintain the swirls of cream and berries.
  5. Chill and Serve:
    • Divide the mixture into serving glasses or bowls.
    • Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.
    • Garnish with a few whole berries on top if desired.
