Keto Beef and Broccoli
Ingredients:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
- 2 cups broccoli florets
- 3 tbsp avocado oil (or other high smoke point oil)
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, minced (or 1 tsp ground ginger)
- 1/4 cup coconut aminos (for a soy sauce substitute; if you can tolerate soy, you can use tamari or low-sodium soy sauce)
- 1 tbsp sesame oil
- 1 tbsp rice vinegar (optional, for a tangy flavor)
- 1 tbsp erythritol or your preferred keto sweetener (adjust to taste)
- 1/2 cup beef broth
- 1 tsp xanthan gum (for thickening; optional)
- Salt and pepper, to taste
- Sesame seeds (for garnish, optional)
- Green onions, chopped (for garnish, optional)

Instructions:
- Prepare the Beef: Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer and cook until browned and cooked through, about 2-3 minutes per side. Remove the beef from the skillet and set it aside.
- Cook the Broccoli: In the same skillet, add another tablespoon of avocado oil. Add the broccoli florets and stir-fry for about 3-4 minutes, or until they are tender but still crisp. Remove the broccoli from the skillet and set it aside with the beef.
- Make the Sauce: In the same skillet, add the remaining tablespoon of avocado oil. Sauté the garlic and ginger until fragrant, about 30 seconds to 1 minute. Pour in the coconut aminos, sesame oil, and rice vinegar. Stir to combine. If you prefer a thicker sauce, sprinkle in the xanthan gum and whisk until the sauce thickens. If you want a sweeter sauce, add erythritol to taste.
- Combine and Serve: Return the cooked beef and broccoli to the skillet. Stir everything together until well coated with the sauce and heated through. Adjust seasoning with salt and pepper if needed.
- Garnish and Enjoy: Serve hot, garnished with sesame seeds and chopped green onions if desired.
This keto beef and broccoli is great on its own or served over a bed of cauliflower rice for a complete meal. Enjoy!
