Keto Beef and Broccoli

Ingredients:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • 2 cups broccoli florets
  • 3 tbsp avocado oil (or other high smoke point oil)
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, minced (or 1 tsp ground ginger)
  • 1/4 cup coconut aminos (for a soy sauce substitute; if you can tolerate soy, you can use tamari or low-sodium soy sauce)
  • 1 tbsp sesame oil
  • 1 tbsp rice vinegar (optional, for a tangy flavor)
  • 1 tbsp erythritol or your preferred keto sweetener (adjust to taste)
  • 1/2 cup beef broth
  • 1 tsp xanthan gum (for thickening; optional)
  • Salt and pepper, to taste
  • Sesame seeds (for garnish, optional)
  • Green onions, chopped (for garnish, optional)

Instructions:

  1. Prepare the Beef: Heat 1 tablespoon of avocado oil in a large skillet or wok over medium-high heat. Add the sliced beef in a single layer and cook until browned and cooked through, about 2-3 minutes per side. Remove the beef from the skillet and set it aside.
  2. Cook the Broccoli: In the same skillet, add another tablespoon of avocado oil. Add the broccoli florets and stir-fry for about 3-4 minutes, or until they are tender but still crisp. Remove the broccoli from the skillet and set it aside with the beef.
  3. Make the Sauce: In the same skillet, add the remaining tablespoon of avocado oil. Sauté the garlic and ginger until fragrant, about 30 seconds to 1 minute. Pour in the coconut aminos, sesame oil, and rice vinegar. Stir to combine. If you prefer a thicker sauce, sprinkle in the xanthan gum and whisk until the sauce thickens. If you want a sweeter sauce, add erythritol to taste.
  4. Combine and Serve: Return the cooked beef and broccoli to the skillet. Stir everything together until well coated with the sauce and heated through. Adjust seasoning with salt and pepper if needed.
  5. Garnish and Enjoy: Serve hot, garnished with sesame seeds and chopped green onions if desired.

This keto beef and broccoli is great on its own or served over a bed of cauliflower rice for a complete meal. Enjoy!
