Keto Almond Cake
Ingredients:
- 1 ½ cups almond flour
- ½ cup erythritol (or any keto-friendly sweetener of your choice)
- ¼ cup unsweetened cocoa powder (optional, for a chocolate flavor)
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 3 large eggs
- ½ cup unsalted butter, melted (or coconut oil)
- 1 teaspoon vanilla extract
- ¼ cup unsweetened almond milk (or any keto-friendly milk)
- 2 tablespoons lemon juice (optional, for a hint of citrus)

Instructions:
- Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
- In a large bowl, combine the almond flour, erythritol, cocoa powder (if using), baking powder, and salt. Mix well.
- In another bowl, whisk the eggs, melted butter (or coconut oil), vanilla extract, and almond milk until smooth. If using lemon juice, add it to the wet ingredients.
- Pour the wet ingredients into the dry ingredients and mix until just combined.
- Transfer the batter to the prepared cake pan and spread it out evenly.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- Optional: Dust with a bit of powdered erythritol or top with a keto-friendly frosting if desired.
