Keto Almond Cake

Ingredients:

  • 1 ½ cups almond flour
  • ½ cup erythritol (or any keto-friendly sweetener of your choice)
  • ¼ cup unsweetened cocoa powder (optional, for a chocolate flavor)
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 3 large eggs
  • ½ cup unsalted butter, melted (or coconut oil)
  • 1 teaspoon vanilla extract
  • ¼ cup unsweetened almond milk (or any keto-friendly milk)
  • 2 tablespoons lemon juice (optional, for a hint of citrus)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and line an 8-inch round cake pan with parchment paper.
  2. In a large bowl, combine the almond flour, erythritol, cocoa powder (if using), baking powder, and salt. Mix well.
  3. In another bowl, whisk the eggs, melted butter (or coconut oil), vanilla extract, and almond milk until smooth. If using lemon juice, add it to the wet ingredients.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined.
  5. Transfer the batter to the prepared cake pan and spread it out evenly.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean.
  7. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  8. Optional: Dust with a bit of powdered erythritol or top with a keto-friendly frosting if desired.
