Ingredients:

For the Duffins:

  • 2 cups almond flour
  • 1/4 cup coconut flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, melted
  • 3 large eggs
  • 1/4 cup unsweetened almond milk (or any low-carb milk)
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon (optional for extra flavor)
  • Zest of 1 lemon (optional for a fresh twist)

For the Topping:

  • 1/4 cup melted butter
  • 1/4 cup erythritol (or preferred sweetener)
  • 1 teaspoon cinnamon (optional)

Instructions:

For the Duffins:

  1. Preheat the Air Fryer to 350°F (175°C).
  2. Mix the Dry Ingredients: In a medium bowl, combine the almond flour, coconut flour, baking powder, salt, and cinnamon (if using).
  3. Mix the Wet Ingredients: In another bowl, whisk together the melted butter, eggs, almond milk, erythritol, and vanilla extract. If you’re using lemon zest, add it to the wet ingredients as well.
  4. Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until smooth and well combined.
  5. Prepare the Air Fryer Basket: Lightly grease your air fryer basket or line it with parchment paper to prevent sticking. You can also use silicone muffin cups for easy cleanup.
  6. Spoon the Batter into the Basket: If you’re using silicone muffin cups, fill each one about halfway with batter. If you’re using the air fryer basket, drop spoonfuls of the batter (about 2 tablespoons per duffin) into the basket, making sure they are spaced out to allow airflow.
  7. Cook the Duffins: Place the basket in the air fryer and cook for about 10-12 minutes, or until the duffins are golden and a toothpick inserted comes out clean. Cooking times may vary slightly based on your air fryer, so check after 8 minutes and adjust as needed.

For the Topping:

  1. While the duffins are cooling, prepare the topping by mixing the melted butter, erythritol, and cinnamon in a small bowl. Stir until well combined.
  2. Once the duffins have cooled slightly, brush the topping over the duffins to coat them in a sweet cinnamon butter glaze.

Serving:

  • Serve the duffins warm or at room temperature.
  • These can be enjoyed as a breakfast treat, snack, or dessert, and pair perfectly with a cup of coffee or tea.

Storage:

  • Store any leftovers in an airtight container at room temperature for up to 2 days or refrigerate them for up to 5 days. Reheat them in the air fryer or microwave for a few seconds before serving.
