Ingredients:
For the Duffins:
- 2 cups almond flour
- 1/4 cup coconut flour
- 2 teaspoons baking powder
- 1/4 teaspoon salt
- 1/2 cup unsalted butter, melted
- 3 large eggs
- 1/4 cup unsweetened almond milk (or any low-carb milk)
- 1/4 cup erythritol (or preferred sweetener)
- 1 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional for extra flavor)
- Zest of 1 lemon (optional for a fresh twist)

Instructions:
For the Duffins:
- Preheat the Air Fryer to 350°F (175°C).
- Mix the Dry Ingredients: In a medium bowl, combine the almond flour, coconut flour, baking powder, salt, and cinnamon (if using).
- Mix the Wet Ingredients: In another bowl, whisk together the melted butter, eggs, almond milk, erythritol, and vanilla extract. If you’re using lemon zest, add it to the wet ingredients as well.
- Combine Wet and Dry Ingredients: Gradually add the dry ingredients to the wet ingredients, mixing until smooth and well combined.
- Prepare the Air Fryer Basket: Lightly grease your air fryer basket or line it with parchment paper to prevent sticking. You can also use silicone muffin cups for easy cleanup.
- Spoon the Batter into the Basket: If you’re using silicone muffin cups, fill each one about halfway with batter. If you’re using the air fryer basket, drop spoonfuls of the batter (about 2 tablespoons per duffin) into the basket, making sure they are spaced out to allow airflow.
- Cook the Duffins: Place the basket in the air fryer and cook for about 10-12 minutes, or until the duffins are golden and a toothpick inserted comes out clean. Cooking times may vary slightly based on your air fryer, so check after 8 minutes and adjust as needed.
For the Topping:
- While the duffins are cooling, prepare the topping by mixing the melted butter, erythritol, and cinnamon in a small bowl. Stir until well combined.
- Once the duffins have cooled slightly, brush the topping over the duffins to coat them in a sweet cinnamon butter glaze.

- Serve the duffins warm or at room temperature.
