Instant Pot Lasagna
Ingredients:
- 1 pound ground beef (or Italian sausage)
- 1 small onion, diced
- 3 garlic cloves, minced
- 1 jar (24 oz) marinara sauce
- 1 cup water
- 1 cup ricotta cheese
- 1 ½ cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 1 egg
- 1 tablespoon dried Italian seasoning
- 8-10 no-boil lasagna noodles (you can break them to fit)
- Salt and pepper to taste
- Fresh basil or parsley for garnish (optional)
Instructions:
- Sauté the Meat:
- Set your Instant Pot to the “Sauté” function. Add a bit of oil, and when it’s hot, add the ground beef (or Italian sausage), onion, and garlic. Cook until the meat is browned and the onion is soft, about 5-7 minutes. Drain excess fat if necessary. Season with salt and pepper to taste.
- Prepare the Sauce:
- Add the marinara sauce and 1 cup of water to the pot. Stir well to combine. Turn off the sauté function.
- Prepare the Cheese Mixture:
- In a separate bowl, mix together the ricotta cheese, 1 cup of the mozzarella, ½ cup of the Parmesan, the egg, and Italian seasoning. Stir until well combined.
- Layer the Lasagna:
- Lightly grease a 7-inch springform pan or an Instant Pot-safe pan. Start with a layer of the meat sauce at the bottom. Add a layer of broken lasagna noodles on top, followed by a layer of the cheese mixture. Repeat the layers (sauce, noodles, cheese) until you run out, ending with the sauce on top.
- Pressure Cook:
- Cover the pan tightly with aluminum foil to prevent excess moisture from getting in. Place a trivet in the Instant Pot and add 1 ½ cups of water to the bottom of the pot. Set the lasagna pan on the trivet.
- Close the lid and set the valve to the sealing position. Cook on high pressure for 24 minutes. Once done, allow the pressure to release naturally for 10 minutes, then do a quick release for any remaining pressure.
- Add Final Cheese Layer:
- Carefully remove the lasagna from the Instant Pot and remove the foil. Sprinkle the remaining mozzarella and Parmesan on top.
- Broil (Optional):
- If you prefer a bubbly, golden top, you can place the lasagna under the broiler for a few minutes until the cheese is melted and slightly browned.
- Serve:
- Let the lasagna rest for about 10-15 minutes before slicing. Garnish with fresh basil or parsley if desired. Enjoy!
