HOMEMADE KETO BOUNTY BARS

Ingredients:

For the Coconut Filling:

  • 1 ½ cups unsweetened shredded coconut
  • ½ cup coconut oil (solidified)
  • ¼ cup powdered erythritol (or your preferred keto sweetener)
  • 1 tsp vanilla extract

For the Chocolate Coating:

  • ½ cup sugar-free dark chocolate chips
  • 1 tbsp coconut oil

Instructions:

  1. Prepare the Coconut Filling:
    • In a mixing bowl, combine the shredded coconut, solidified coconut oil, powdered erythritol, and vanilla extract.
    • Mix until the ingredients are well combined and the mixture holds together when pressed.
  2. Shape the Bars:
    • Line a baking pan with parchment paper.
    • Press the coconut mixture into the pan, spreading it evenly to form a flat layer. Use the back of a spoon to press it down firmly.
    • Refrigerate for at least 30 minutes to firm up.
  3. Cut into Bars:
    • Once the coconut mixture is firm, remove it from the pan and cut it into bar shapes.
  4. Prepare the Chocolate Coating:
    • In a microwave-safe bowl, melt the sugar-free dark chocolate chips and coconut oil together in 30-second intervals, stirring in between until smooth.
  5. Coat the Bars:
    • Dip each coconut bar into the melted chocolate, coating it completely. You can use a fork to help with dipping and let any excess chocolate drip off.
    • Place the coated bars back on the parchment paper.
  6. Chill and Set:
    • Refrigerate the bars again until the chocolate coating is set.
  7. Enjoy:
    • Once the chocolate is firm, the bars are ready to enjoy!
