HOMEMADE KETO BOUNTY BARS
Ingredients:
For the Coconut Filling:
- 1 ½ cups unsweetened shredded coconut
- ½ cup coconut oil (solidified)
- ¼ cup powdered erythritol (or your preferred keto sweetener)
- 1 tsp vanilla extract
For the Chocolate Coating:
- ½ cup sugar-free dark chocolate chips
- 1 tbsp coconut oil
Instructions:
- Prepare the Coconut Filling:
- In a mixing bowl, combine the shredded coconut, solidified coconut oil, powdered erythritol, and vanilla extract.
- Mix until the ingredients are well combined and the mixture holds together when pressed.
- Shape the Bars:
- Line a baking pan with parchment paper.
- Press the coconut mixture into the pan, spreading it evenly to form a flat layer. Use the back of a spoon to press it down firmly.
- Refrigerate for at least 30 minutes to firm up.
- Cut into Bars:
- Once the coconut mixture is firm, remove it from the pan and cut it into bar shapes.
- Prepare the Chocolate Coating:
- In a microwave-safe bowl, melt the sugar-free dark chocolate chips and coconut oil together in 30-second intervals, stirring in between until smooth.
- Coat the Bars:
- Dip each coconut bar into the melted chocolate, coating it completely. You can use a fork to help with dipping and let any excess chocolate drip off.
- Place the coated bars back on the parchment paper.
- Chill and Set:
- Refrigerate the bars again until the chocolate coating is set.
- Enjoy:
- Once the chocolate is firm, the bars are ready to enjoy!
