Diabetic-Friendly Homemade Ice Cream
This ice cream is low in sugar, creamy, and easy to make at home without causing large blood-sugar spikes.
🧾 Ingredients
- 1 cup heavy cream (or coconut cream)
- 1 cup unsweetened almond milk
- 2–3 tbsp erythritol, monk fruit, or stevia (adjust to taste)
- 1 tsp vanilla extract
- Pinch of salt
Optional flavors
- 🍓 mashed strawberries
- 🍫 1 tbsp unsweetened cocoa powder
- 🥜 crushed almonds or walnuts
👩🍳 Instructions
1️⃣ Mix ingredients
In a bowl whisk together:
- heavy cream
- almond milk
- sweetener
- vanilla
- salt
2️⃣ Add flavor (optional)
Stir in cocoa powder, berries, or nuts.
3️⃣ Freeze
Pour the mixture into a freezer-safe container.
4️⃣ Stir while freezing
Every 30–40 minutes for about 2–3 hours, stir the mixture to keep it creamy.
5️⃣ Serve
Once firm and creamy, scoop and enjoy.
