Home Made Keto French fries

Ingredients:

  • 2 large zucchinis or 1 large eggplant (for a keto-friendly option, zucchini is preferred)
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • Optional: 1/2 teaspoon dried rosemary or thyme for extra flavor

Instructions:

  1. Preheat Oven: Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.
  2. Prepare Vegetables:
    • For Zucchini: Wash and cut the zucchinis into thin strips, similar to the shape of French fries.
    • For Eggplant: Wash and cut the eggplant into thin strips.
  3. Season: In a large bowl, toss the vegetable strips with olive oil, paprika, garlic powder, onion powder, salt, and pepper. Make sure all pieces are evenly coated.
  4. Arrange on Baking Sheet: Spread the vegetable strips out in a single layer on the prepared baking sheet. Try not to overcrowd them to ensure they crisp up properly.
  5. Bake: Bake in the preheated oven for 20-25 minutes, flipping the strips halfway through the cooking time. Bake until they are golden brown and crispy.
  6. Cool: Remove from the oven and let cool slightly before serving. They will crisp up more as they cool.
  7. Serve: Enjoy your keto French fries with your favorite dipping sauce or as a side dish.
