Juicy, flavorful chicken marinated in coconut milk and Thai-inspired spices, grilled until lightly charred, then served with a creamy spicy peanut dipping sauce.

Chicken Satay
- 700 g boneless, skinless chicken breast
- 120 ml light coconut milk
- 1 tbsp low-sodium soy sauce
- 1 tbsp lime juice
- 1 tbsp honey
- 1 tbsp natural peanut butter
- 3 cloves garlic, minced
- 1 tsp grated fresh ginger
- 1 tsp curry powder
- Β½ tsp turmeric
- Β½ tsp smoked paprika
- Β½ tsp ground coriander
- ΒΌ tsp black pepper
- Β½ tsp salt
- 1 tbsp chopped cilantro, optional

πΆοΈ Spicy Peanut Sauce
- 60 g natural peanut butter
- 80 g nonfat Greek yogurt
- 60 ml light coconut milk
- 1 tbsp low-sodium soy sauce
- 1 tbsp lime juice
- 1β2 tsp sriracha or chili sauce
- 1 tsp honey
- Β½ tsp grated ginger
- 1 small garlic clove, minced
- 2β4 tbsp warm water, as needed
π¨βπ³ Instructions
1. Prepare the chicken
Cut the chicken breast into thin, bite-sized strips.
In a large bowl, combine the coconut milk, soy sauce, lime juice, honey, peanut butter, garlic, ginger, curry powder, turmeric, paprika, coriander, pepper, and salt.
Add the chicken and toss until completely coated.
Cover and refrigerate for at least 30 minutes, preferably 2β4 hours.
2. Prepare the skewers
If using wooden skewers, soak them in water for 20β30 minutes.
Thread the marinated chicken onto the skewers, folding each strip back and forth to create a compact satay shape.
3. Make the peanut sauce
Add peanut butter, Greek yogurt, coconut milk, soy sauce, lime juice, sriracha, honey, ginger, and garlic to a bowl.
Whisk until smooth.
Add warm water 1 tablespoon at a time until you reach a creamy dipping-sauce consistency.
Taste and adjust the lime, chili, or soy sauce according to your preference.
4. Grill the chicken
Heat a grill or grill pan over medium-high heat and lightly oil it.
Place the skewers on the hot grill and cook for approximately 3β5 minutes per side, depending on thickness.
The chicken should develop beautiful browned/charred edges and reach an internal temperature of 74Β°C / 165Β°F.
5. Serve
Remove the skewers from the grill and let them rest for 2β3 minutes.
Garnish with fresh cilantro and lime wedges.
Serve immediately with the spicy peanut sauce for dipping.
