🥩 Ingredients

  • 2 cups cooked lean corned beef (or pastrami), chopped
  • 1 cup low-fat cottage cheese
  • 1 cup plain Greek yogurt (high-protein swap for dressing base)
  • 1 cup shredded Swiss cheese (or reduced-fat)
  • 1½ cups sauerkraut, drained well
  • 2 tbsp light mayonnaise
  • 1 tbsp mustard (Dijon preferred)
  • 1 tbsp ketchup (for that Russian dressing flavor)
  • 1 tsp garlic powder
  • 1 tsp black pepper
  • Optional: 1–2 slices whole grain bread, cubed (for a “bready” feel)

🔥 Instructions

  1. Preheat oven to 180°C (350°F).
  2. In a bowl, mix:
    • Greek yogurt
    • Cottage cheese
    • Mayo, mustard, ketchup
    • Garlic powder + pepper
  3. Fold in:
    • Corned beef
    • Sauerkraut
    • Half the Swiss cheese
  4. Pour mixture into a baking dish.
  5. Sprinkle remaining Swiss cheese on top.
  6. (Optional) Add bread cubes for texture.
  7. Bake for 25–30 minutes until bubbly and golden.

  • Use extra-lean meat or even turkey pastrami
  • Add ½ scoop unflavored protein powder to the sauce (optional but effective)
  • Swap Swiss for part-skim mozzarella if you want lower fat but still high protein
