High-Protein Pineapple Casserole Bake

Ingredients

  • 1 can (20 oz) Crushed Pineapple in 100% Juice (drained, reserve 2 tbsp juice)
  • 1 cup Low-Fat Cottage Cheese (blended smooth)
  • ½ cup Vanilla or Unflavored Whey-Casein Protein Powder
  • ½ cup Zero-Calorie Granulated Sweetener (like Monk Fruit or Erythritol)
  • 3 large Eggs
  • ⅓ cup Low-Fat Milk or Unsweetened Almond Milk
  • ½ cup Coconut Flour or Oat Flour
  • 1 tsp Baking Powder
  • ½ tsp Ground Cinnamon or Vanilla Extract

Instructions

  1. Preheat & Prep:Preheat your oven to 350°F (175°C). Grease an 8×8-inch glass baking dish with cooking spray.
  2. Blend Wet Ingredients:In a large bowl, whisk together the eggs, smooth blended cottage cheese, milk, reserved pineapple juice, and vanilla extract until creamy.
  3. Mix Dry Ingredients:Add the protein powder, zero-calorie sweetener, coconut flour, baking powder, and cinnamon to the wet mixture. Fold gently with a spatula until a smooth batter forms.
  4. Combine Pineapple & Bake:Fold in the drained crushed pineapple. Pour the mixture into your prepared baking dish and smooth the top evenly.
  5. Broil for Caramelization:Bake for 30 to 35 minutes until the edges are golden and the center is set. Turn the oven to Broil for the final 2–3 minutes to create that signature caramelized, golden-brown crust on top.
  6. Serve:Let cool for 10 minutes before slicing into 8 equal squares. Serve warm or chilled!
