High-Protein Patty Melts

Serves: 2 (easily doubled) Protein: ~40–45g per sandwich Prep + Cook Time: 20 minutes

Ingredients

  • 8 oz (225g) lean ground beef (90–93% lean)
  • 4 slices high-protein bread (or low-carb bread / regular if preferred)
  • 4–6 slices cheddar or American cheese (or a mix of cheddar + mozzarella for extra pull)
  • 1 small onion, thinly sliced (optional but recommended)
  • 1 tbsp butter or olive oil
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp smoked paprika
  • Salt & black pepper to taste
  • Optional: 1 tsp Worcestershire sauce

Instructions

  1. Heat a skillet over medium heat. Add a little oil or butter and cook the sliced onion until soft and lightly caramelized (5–6 minutes). Remove and set aside.
  2. In the same skillet, add the ground beef. Season with garlic powder, onion powder, smoked paprika, salt, pepper, and Worcestershire sauce if using. Cook until browned and cooked through, breaking it into small pieces. Drain any excess fat.
  3. Wipe the skillet clean or use a clean pan. Butter one side of each bread slice.
  4. Build the sandwiches:
    • Place one slice of bread butter-side down in the pan.
    • Add a slice of cheese, half the cooked beef, some caramelized onions, another slice of cheese, and the top slice of bread (butter-side up).
  5. Cook over medium-low heat for 3–4 minutes until the bottom is golden and crispy. Flip carefully and cook the other side until golden and the cheese is fully melted and gooey.
  6. Repeat with the second sandwich.

Tips for Maximum Protein & Flavor

  • Use 93% lean beef + high-protein bread to keep protein high and fat moderate.
  • Add an extra slice of cheese or mix in a little cottage cheese into the beef for even more protein.
  • For a lower-carb version, use low-carb bread or make it open-faced.

Serve hot while the cheese is still stretchy. These are extremely satisfying and perfect for a high-protein lunch or dinner.
