
High-Protein Crispy Chicken Fritters

Ingredients
- 1.5 lbs (700g) Chicken Breast, finely diced (or ground chicken)
- 1 cup Shredded Mozzarella or Cheddar Cheese
- 2 large Eggs
- ⅓ cup Greek Yogurt (or light mayonnaise)
- ⅓ cup Almond Flour (or all-purpose flour / oat flour)
- 2 tbsp Fresh Dill or Parsley, finely chopped
- 1 tsp Garlic Powder
- ½ tsp Onion Powder
- ½ tsp Fine Sea Salt
- ¼ tsp Black Pepper
- 1–2 tbsp Olive Oil or Avocado Oil (for frying)
Instructions
- Prep the Chicken:Finely chop the chicken breast into tiny, bite-sized cubes.
- Mix the Batter:In a large bowl, combine the diced chicken, shredded cheese, eggs, Greek yogurt, flour, chopped herbs, garlic powder, onion powder, salt, and pepper. Mix until well combined into a thick batter.
- Cook the Fritters:
- Pan-Frying (Recommended): Heat oil in a large cast-iron skillet over medium heat. Drop spoonfuls of the chicken mixture into the pan and gently flatten with a spatula into round patties. Cook for 4–5 minutes per side until deep golden brown and cooked through (internal temperature reaching 165°F / 74°C).
- Air Fryer Option: Preheat air fryer to 380°F (190°C). Spray the basket with oil, drop patties in a single layer, and air fry for 10–12 minutes, flipping halfway through.
- Serve:Transfer to a paper towel-lined plate. Serve warm with fresh lemon wedges and a garlic dip or Greek yogurt ranch!
