🥣 Ingredients (makes ~12 taquitos)
- 2 cups cooked shredded chicken breast
- 1 cup shredded part-skim mozzarella or cheddar cheese
- ½ cup low-fat cream cheese or Greek yogurt
- 1 tsp garlic powder
- 1 tsp cumin
- 1 tsp chili powder
- Salt & pepper to taste
- 12 small whole wheat or low-carb corn tortillas
- Cooking spray or light oil for baking/frying
👩🍳 Instructions
- Preheat oven
To 200°C (400°F). Line a baking sheet with parchment. - Mix filling
In a bowl, combine shredded chicken, cheese, cream cheese (or Greek yogurt), and spices until well mixed. - Assemble taquitos
Warm tortillas slightly to make them pliable.
Spoon about 2–3 tbsp filling on one side of each tortilla and roll tightly. - Bake or fry
- Bake: Place taquitos seam-side down on the baking sheet, spray lightly with oil, and bake 15–20 minutes until crispy and golden, turning once halfway.
- Air fryer: Cook at 190°C (375°F) for 12 minutes, flipping halfway.
- Pan-fry: Cook in a little oil over medium heat, turning to crisp all sides.
- Serve
With salsa, guacamole, or Greek yogurt dip.
