🌮 High-Protein Crispy Chicken Cheese Taquitos

🥣 Ingredients (makes ~12 taquitos)

  • 2 cups cooked shredded chicken breast
  • 1 cup shredded part-skim mozzarella or cheddar cheese
  • ½ cup low-fat cream cheese or Greek yogurt
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 tsp chili powder
  • Salt & pepper to taste
  • 12 small whole wheat or low-carb corn tortillas
  • Cooking spray or light oil for baking/frying

👩‍🍳 Instructions

  1. Preheat oven
    To 200°C (400°F). Line a baking sheet with parchment.
  2. Mix filling
    In a bowl, combine shredded chicken, cheese, cream cheese (or Greek yogurt), and spices until well mixed.
  3. Assemble taquitos
    Warm tortillas slightly to make them pliable.
    Spoon about 2–3 tbsp filling on one side of each tortilla and roll tightly.
  4. Bake or fry
    • Bake: Place taquitos seam-side down on the baking sheet, spray lightly with oil, and bake 15–20 minutes until crispy and golden, turning once halfway.
    • Air fryer: Cook at 190°C (375°F) for 12 minutes, flipping halfway.
    • Pan-fry: Cook in a little oil over medium heat, turning to crisp all sides.
  5. Serve
    With salsa, guacamole, or Greek yogurt dip.
